Red Wine Braised Frenched Drumsticks

Delve into a hearty and sophisticated dish with these red wine-braised drumsticks. Slow-cooked in a rich red wine sauce with vegetables, the chicken becomes tender and absorbs the deep, robust flavors, perfect for an elegant dinner.


Ingredients:

  • 8 RedBird Farms Frenched Chicken Drumsticks

  • 2 tablespoons olive oil

  • 1 onion, finely chopped

  • 2 carrots, diced

  • 2 cloves garlic, minced

  • 1 cup red wine

  • 1 cup chicken broth

  • 1 tablespoon tomato paste

  • 1 teaspoon fresh thyme leaves

  • 2 bay leaves

  • Salt and freshly ground black pepper, to taste

  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Season the drumsticks with salt and black pepper.

  2. Heat olive oil in a large Dutch oven over medium-high heat. Add the drumsticks and brown on all sides, about 5 minutes. Remove and set aside.

  3. In the same pot, add onion and carrots; sauté until softened, about 5 minutes.

  4. Stir in minced garlic and tomato paste; cook for an additional minute.

  5. Pour in red wine, scraping up any browned bits from the bottom of the pot. Let it reduce by half.

  6. Add chicken broth, thyme, bay leaves, and return the drumsticks to the pot.

  7. Bring to a simmer, then cover and reduce heat to low. Braise for 45 minutes, until the chicken is tender.

  8. Remove the lid and simmer for an additional 10 minutes to thicken the sauce.

  9. Garnish with fresh parsley before serving.

Makes 4 servings (2 drumsticks per person)
