Honey-Mustard Chicken Skewers

Ingredients

  • 1 lb RedBird Chicken Breasts, cut into 1-inch cubes

  • 2 tbsp olive oil

  • Salt and pepper, to taste

  • 1 bell pepper (red or green), cut into 1-inch pieces

  • 1 zucchini, cut into 1-inch pieces

  • 1 small red onion, cut into wedges

  • Fresh rosemary sprigs (optional, for garnish)

For the Honey-Mustard Glaze

  • 3 tbsp honey

  • 2 tbsp Dijon mustard

  • 1 tbsp whole-grain mustard (optional, for extra texture)

  • 1 tbsp apple cider vinegar

  • 1 clove garlic, minced

  • 1 tsp fresh rosemary, finely chopped

Method

  1. Prepare the Skewers: In a large bowl, toss Chicken cubes with olive oil, salt, and pepper. Thread the Chicken onto skewers, alternating with bell pepper and onion pieces.

  2. Make the Glaze: In a small bowl, whisk together honey, Dijon mustard, whole-grain mustard, apple cider vinegar, minced garlic, and chopped rosemary until smooth.

  3. Cook the Skewers: Preheat grill or grill pan to medium-high heat. Grill the skewers for 8-10 minutes, turning occasionally, until Chicken is cooked through.

  4. Glaze and Serve: Brush the skewers generously with the honey-mustard glaze in the final minute of cooking, allowing it to caramelize slightly. Garnish with fresh rosemary sprigs, if desired, and serve warm.
