Honey-Mustard Chicken Skewers
Ingredients
1 lb RedBird Chicken Breasts, cut into 1-inch cubes
2 tbsp olive oil
Salt and pepper, to taste
1 bell pepper (red or green), cut into 1-inch pieces
1 zucchini, cut into 1-inch pieces
1 small red onion, cut into wedges
Fresh rosemary sprigs (optional, for garnish)
For the Honey-Mustard Glaze
3 tbsp honey
2 tbsp Dijon mustard
1 tbsp whole-grain mustard (optional, for extra texture)
1 tbsp apple cider vinegar
1 clove garlic, minced
1 tsp fresh rosemary, finely chopped
Method
Prepare the Skewers: In a large bowl, toss Chicken cubes with olive oil, salt, and pepper. Thread the Chicken onto skewers, alternating with bell pepper and onion pieces.
Make the Glaze: In a small bowl, whisk together honey, Dijon mustard, whole-grain mustard, apple cider vinegar, minced garlic, and chopped rosemary until smooth.
Cook the Skewers: Preheat grill or grill pan to medium-high heat. Grill the skewers for 8-10 minutes, turning occasionally, until Chicken is cooked through.
Glaze and Serve: Brush the skewers generously with the honey-mustard glaze in the final minute of cooking, allowing it to caramelize slightly. Garnish with fresh rosemary sprigs, if desired, and serve warm.
