Healthy Chicken Lettuce Wraps
Ingredients:
1 lb RedBird Chicken Breasts, chopped into small, bite-sized pieces
1 tbsp olive oil
1 small onion, finely diced
2 cloves garlic, minced
1/4 cup soy sauce (or coconut aminos for a lower-sodium option)
2 tbsp hoisin sauce
1 tbsp rice vinegar
1 tsp fresh ginger, grated
1 tsp sesame oil
1/4 tsp red pepper flakes (optional for heat)
1 cup diced water chestnuts
Butter or romaine lettuce leaves for wrapping
Optional garnish: sliced green onions, sesame seeds, sliced carrots, and/or chopped peanuts
Instructions:
Heat olive oil in a large skillet over medium heat. Add chopped RedBird Chicken Breasts and cook until fully cooked and golden, about 6-8 minutes.
In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, ginger, sesame oil, and red pepper flakes.
Add onion and garlic to the skillet with the cooked chicken. Cook for 2-3 minutes until softened, then pour the sauce over the chicken. Stir well to coat and simmer for another 2-3 minutes until the sauce thickens slightly.
Stir in water chestnuts and cook for 1-2 minutes.
Spoon the saucy chicken mixture into lettuce leaves, garnish as desired, and serve!
