Healthy Chicken Lettuce Wraps

Ingredients:

  • 1 lb RedBird Chicken Breasts, chopped into small, bite-sized pieces

  • 1 tbsp olive oil

  • 1 small onion, finely diced

  • 2 cloves garlic, minced

  • 1/4 cup soy sauce (or coconut aminos for a lower-sodium option)

  • 2 tbsp hoisin sauce

  • 1 tbsp rice vinegar

  • 1 tsp fresh ginger, grated

  • 1 tsp sesame oil

  • 1/4 tsp red pepper flakes (optional for heat)

  • 1 cup diced water chestnuts

  • Butter or romaine lettuce leaves for wrapping

  • Optional garnish: sliced green onions, sesame seeds, sliced carrots, and/or chopped peanuts

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add chopped RedBird Chicken Breasts and cook until fully cooked and golden, about 6-8 minutes.

  2. In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, ginger, sesame oil, and red pepper flakes.

  3. Add onion and garlic to the skillet with the cooked chicken. Cook for 2-3 minutes until softened, then pour the sauce over the chicken. Stir well to coat and simmer for another 2-3 minutes until the sauce thickens slightly.

  4. Stir in water chestnuts and cook for 1-2 minutes.

  5. Spoon the saucy chicken mixture into lettuce leaves, garnish as desired, and serve!
