Chicken Chili

Ingredients

  • 2 lbs RedBird Boneless Skinless Chicken Thighs, shredded

  • 1 tbsp olive oil

  • 1 onion, diced

  • 1 red bell pepper, chopped

  • 3 garlic cloves, minced

  • 15 oz canned diced tomatoes

  • 2 cups chicken broth

  • 15 oz can black beans

  • 15 oz can pinto beans

  • 15 oz can corn

  • 1 tbsp homemade chili seasoning

Method

  1. Heat oil in a large pot over medium-high heat. Add chicken and cook, stirring occasionally, for about 10 minutes. Shred chicken fork once tender.

  2. Add onion, garlic, and pepper, and sauté until tender and fragrant.

  3. Stir in the remaining ingredients. Bring to a boil, then lower the heat and simmer for 20-30 minutes.

  4. Enjoy!

This recipe also works great in a slow cooker!
