Chicken Chili
Ingredients
2 lbs RedBird Boneless Skinless Chicken Thighs, shredded
1 tbsp olive oil
1 onion, diced
1 red bell pepper, chopped
3 garlic cloves, minced
15 oz canned diced tomatoes
2 cups chicken broth
15 oz can black beans
15 oz can pinto beans
15 oz can corn
1 tbsp homemade chili seasoning
Method
Heat oil in a large pot over medium-high heat. Add chicken and cook, stirring occasionally, for about 10 minutes. Shred chicken fork once tender.
Add onion, garlic, and pepper, and sauté until tender and fragrant.
Stir in the remaining ingredients. Bring to a boil, then lower the heat and simmer for 20-30 minutes.
