Pulled BBQ Chicken Thighs

Ingredients

  • 2 lbs RedBird Farms Boneless, Skinless Chicken Thighs (2 packs)

  • Your favorite BBQ dry rub

  • 2 tablespoons olive oil

  • 1/3 cup of your favorite BBQ sauce

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon liquid smoke

Method

  1. Preheat the oven to 375 degrees F.

  2. Season chicken with BBQ dry rub, rubbing with hands.

  3. Add olive oil to a cast-iron skillet over medium heat and cook about 2-3 minutes per side.

  4. In a small bowl, whisk together BBQ sauce, apple cider vinegar, Worcestershire sauce, and liquid smoke.

  5. Remove the skillet from the heat, pour the BBQ sauce mixture over the browned chicken, and roast in the oven for 15-20 minutes, or until internal temperature reaches 165F.

  6. Once the chicken has cooled, shred using forks. Et Voilà!

  7. Serve with buns and potato salad, if desired.
