Stuffed Chicken Thighs Wrapped in Bacon
INGREDIENTS
4 RedBird Farms Boneless Skinless Chicken Thighs
8 pieces bacon
1/4 cup green onion
1/4 cup parsley
1/2 cup Italian bread crumbs
1 cup fresh spinach
3 ounces herbed creamy goat cheese
3 tablespoons olive oil
METHOD
Preheat your air fryer to 375F (190C)
In a food processor, blend spinach, green onion, parsley, Italian bread crumbs, goat cheese, and olive oil. Create a heavy paste.
Lay bacon on a flat surface and place one Chicken Thigh on two pieces of bacon. Spoon the herb and cheese mixture on top of each Chicken Thigh.
Roll the bacon around the Chicken Thigh and secure with a toothpick.
Brush the Chicken Thighs with olive oil an place them in the air fryer basket.
Cook for 15-20 minutes or until the Chicken is cooked through and the bacon is crispy.
Serve with fresh spinach on the side.
